This Greek inspired chicken & pasta salad uses a homemade dressing for both the chicken marinade and pasta salad dressing. I like to pierce the chicken breasts a couple of times with a fork or knife so the marinade really penetrates the meat. You can use this dressing on green salads or to marinate other types of food like beef, fish or vegetables. I didn’t use too much, just a couple tablespoons but if you like feta, add more in.
If you use dark meat, add an additional hour or so to the cook time because dark meat takes longer to cook than white meat. If you choose to use skin-on chicken, you may want to brown the chicken in a skillet before adding it to the slow cooker. If you use non-waxy potatoes like russet or sweet potatoes, I suggest you cut them into larger chunks than you usually would. Make this low-carb pizza-inspired meal in your slow cooker or Instant Pot. I removed the pizza crust and used chopped chicken breasts as a base to make this recipe low-carb and keto-friendly. I like to use boneless, skinless chicken breasts with this recipe but you can absolutely use boneless, skinless thighs if that’s what you prefer. If you use chicken thighs for the slow cooker, add an extra 30-60 minutes of cooking time and for the electric pressure cooker (Instant Pot), add an additional 2-3 minutes.
I’m a firm believer that the key to good slow cooker or electric pressure cooker (Instant Pot) recipe is a good sauce. Suggestions of things you can add to the sauce are lemon zest, 1/2 tsp Dijon mustard, coconut aminos (or low-sodium soy sauce if you’re not adhering to a particular diet), or even a bit of hot sauce or sriracha to spice things up a bit. I prefer to use dark meat when slow cooking because dark meat is less likely to overcook and dry-out like white meat will. To brown the chicken before adding it to the slow cooker, heat a couple teaspoons of oil in a large skillet over medium-high heat, add the chicken skin side down and cook a few minutes until browned.
