It’s not often that you find a meatless version of General Tso’s at a chinese take out spot, so I decided to create our own version of this old time favorite. oil 2 Garlic cloves, minced 1/2 Tbsp fresh ginger, minced 1 Tbsp Rice vinegar 3 Tbsp shoyu or soy sauce 1 Tbsp Peanut butter 1 Tbsp Sesame seeds, plus more for garnish 1-Drain Tofu and wrap in a kitchen towel, place under a heavy object(I use my cast iron skillet) and allow to drain for 10 minutes.
It’s definitely one of my favorite hobbies and yet, there are days when I don’t want to spend hours in the kitchen cooking a meal. One pan, 18 minutes and a delicious, tasty and satisfying meal without the hours long commitment to the kitchen. I’ve altered the recipe, slightly, to omit any animal products and increased the measurements to fit my families needs, but other than that, it’s virtually the same. angel hair pasta 8oz cherry tomatoes, halved 1 onion, thinly sliced 4 cloves garlic, minced 3/4 tsp crushed red pepper, more if you like it spicy 4 sprigs basil, roughly chopped 2 Tbsp olive oil 1 Tbsp sea salt 1/2 tsp black pepper
When our dear friends, Chris A. K.A “Peter” and Alyssa, asked us to attend their destination wedding in Mexico, we gladly accepted. We lounged in the sun and had tacos made fresh poolside, danced to live music nightly and enjoyed evening entertainment in the form of Brazilian capoeira, traditional Mexican dance and sang along to reggae. The brides sister Danie put on a bachelorette party poolside, including one of the best goodies bags I’ve ever received and am still reaping the benefits of, followed by a little black dress dinner with the ladies and then an evening of drinks and dancing in the lobby where we met up with the groom and his boys. Italian artichoke pasta with sun-dried tomatoes, crimini-mushroom risotto and fresh made bread dunked in olive oil satisfied us on our last evening at the resort, followed by fresh pastries and ice cream at the patisserie.
For all those Gluten-free folks out there, grab your favorite seed crackers and sit down with this dip for a delightful snack session. This recipe came from Jeremiah’s Aunt Judy at one of the famous St. Louis Christmas Party gatherings. Judy is gluten-free, as is Aunt Laurie and so Judy comes to the Christmas party every year bearing gluten-free snacks to share. She had found the original recipe in a cookbook (I wish I could give credit to the cookbook, but I don’t know the title or author) and so I am sharing this recipe with all of you in the spirit of sharing good things.
