As the weather has shifted, and especially after my wisdom teeth extraction a few weeks ago, I’ve been going back to this comforting, soul-warming recipe again and again. can Coconut Milk of Choice (can sub for 2c water + 4 tbsp coconut milk powder) 1 cup Cheese of choice (we like to use goat cheese, but can use cow’s cheese or Vegan) 1/2 cup Bread Crumbs of choice toasted with 1 tsp. (Oven on low broil until golden) 1 packaged Pasta of Choice (we like Tinkyada Shells or Macaroni Noodles) Par-Cook In a medium saucepan, mix coconut milk, spices and saved pasta water and simmer on medium-low while covered for 5-7m.

We’re back home in the desert, currently hiding from the heat and waiting for the sun to drop below the mountains so we can venture out into the fresh air… It was so needed to reconnect with family and friends, feel the sand in my toes and the ocean air kissing my cheeks. I’ve been missing the ocean, and it was so nice to get into the waves for a short surf with my niece and my best friend at the same time. Cooking on a camping stove with the birds chirping, the ocean waves and cool air is something truly special.
