Took 10 minutes to make and tasted heavenly! š„š ******** Maiās Recipe Hong Kong French toast ******** 2 slices brioche, white, or milk bread 1 egg Dash of vanilla extract 1 tbsp milk Reeseās peanut butter Kerrygold unsalted butter **************************** -Cut off the bread crusts -Spread peanut butter on one slice; make a sandwich -Whisk egg with milk and vanilla -In a stainless or cast iron pan, heat 2 tbsp butter on low heat until it bubbles evenly. -Dunk the sandwich in the egg mixture, then gently place on the pan. -Pan fry on low heat until you see brown butter starting to form, about 2 min. (The bottom edge of the bread should also be golden brown). Flip and cook for another couple minutes, then remove from pan & place on a paper towel to soak up excess butter. -Remove paper towel, top with butter, drizzle with condensed milk & serve! This is a simple family-style meal you would have in a Vietnamese home. ******************** Maiās Recipe: Tom rim - Vietnamese caramelized shrimp ******************** 1 Pound 21-30 Easy peel or head on shrimp 3 cloves garlic, minced 1/4 red onion or 1 Shallot, sliced thinly 1-2 Green Onions, chopped 3 tablespoons fish sauce 1.5 tablespoons sugar 1 tsp butter 1-2 teaspoons Vietnamese caramel sauce 1/2 tsp cornstarch dissolved in 1 tablespoon water 1 tsp + Pinch of salt 4 tablespoons vegetable or neutral oil Pinch of Black pepper ********************* 1. Peel & devein shrimp, reserving shells & heads. 2. Place peeled shrimp in water with 1 tsp salt for 10 mins. Drain, then add 1/2 minced garlic, 1/2 shallots, fish sauce, sugar, pinch of salt & pinch of pepper. Cover & marinade for 15-30 min. 3. Make a quick shrimp stock with the shells and heads: Sautee 2 tbsp oil, add shells, salt & pepper, then pour enough water to cover the shells & bring to boil. Reduce liquid to about 1/2 volume, strain & discard shells, set shrimp stock aside. 4. Wipe down wok, heat 2 tbsp oil, sautee remaining garlic and shallots, then add marinated shrimp & marinating liquid. Sautee until shrimp is 3/4 done but not fully cooked (~ 1 min). Remove shrimp with slotted spoon, set aside. 5. Return wok to high heat, then add 1/3 cup shrimp stock, caramel sauce & pepper. Reduce liquid by 1/2, then lower to med heat & add butter (add cornstarch for thicker sauce). Adjust sauce to your liking with more fish sauce, caramel, sugar, butter or salt. 6. Return shrimp to wok, add green onions and toss gently to coat shrimp with sauce (1-2 min max). 7.Remove from heat immediately, plate and finish with green onions and a dash of pepper. 8. Scroll down for recipe! *********** Maiās Recipe Lap cheong (Chinese sausage) fried rice ******************* Ingredients: *************** - 3 lap cheong sausages, sliced - 2 cups day-old brown rice - 1/2 white onion, diced - 3 garlic cloves, minced - 2 green onions, chopped - 2 eggs, beaten - 1.5 tablespoons fish sauce - 1.5 tablespoons mushroom or light soy sauce - 1/2 teaspoon sugar (optional) - Dash of white or black pepper - 3 tablespoons vegetable oil *************** Directions: 1. Using high heat, add 2 tablespoons of oil to wok until you see light smoke. 2. Add white onions and sautee until onions are almost translucent, add garlic, sautee until lightly golden, then add green onion and sautee a few more seconds. 3. Add sliced Lap cheong to middle of pan, sautee until almost charred, then push everything in the pan to top side of the wok to slow the cooking. 4. Add remaining tablespoon of oil to the center of the wok, then add the egg and scramble quickly. Push the egg aside to the top of the pan as well. 5. Add the brown rice and smash lightly into the pan, breaking up any chunks. 6. Add light soy sauce, fish sauce, sugar and pepper. Toss to evenly cook the rice until the rice starts to brown. Now, mix all of the ingredients together until everything is evenly distributed. Rice should be golden brown or slightly charred. 7. Plate, garnish with green onions, and serve! My Thai Kitchen skills are getting better day by day. Tonight I made Tom Yum Goong from scratch. I spent about a week sourcing ingredients, from fresh lemongrass and galangal, to kaffir/makrut lime leaves (generously gifted to me by Thai chef extraordinaire @nik_v73!), shimeji mushrooms, and Thai chilis. The only thing I couldnāt find was the nam prik pao Thai chili jam (will probably make my own, but thatās another sourcing trip because itās made with dry chiliās and shrimp paste!). Overall quite happy with my first effort. (Pro Tip: In Houston, go to to Asia Market or Anna Thai Bistro to source Thai ingredients! ) ************** ***Recipe*** Tom yum goong *********************** - 4 cups shrimp stock or chicken broth - 1-2 stalks of fresh lemongrass, smashed & cut into 2 inch sections - 5-6 Kaffir/Makrut lime leaves, torn in pieces - Galangal root, 1.5 inch nub. Sliced into thin rounds - Thai chilis, whole but bruised (use 2 chilis for mild, 4-6 for medium spice, more if you want spicy) - 12-15 shrimp (21-30 size, about half pound shrimp, shelled & deveined) - 8 ounce package of mild mushrooms (shimeji, oyster, button mushrooms- avoid white mushrooms and shiitake) - 2 Roma tomatoes, cut into 1-inch chunks - Juice of one medium lime - 2 tablespoons fish sauce + more to taste - 2-3 teaspoons tamarind juice - 1-2 teaspoons palm sugar. - 1-2 tablespoons Nam Prik Pao (look for Pantai brand āchili paste with soya bean oilā) - Fresh Cilantro ****************** Directions: ****************** 1. Bring shrimp stock to a boil & remove foam 2. Add aromatics - lemongrass, kaffir/makrut like leaves, galangal. Bring to a boil & simmer for 5-10 minutes. 3. Stir in Nam prik pao & Thai chilis 4. Add mushrooms and tomato, cook for a few minutes until tomato is tender. 5. Add shrimp and cook until just done (about a minute - do not overcook!) 6. Remove from heat, then add lime juice & fish sauce, palm sugar & tamarind to taste. 7. Cheung fun - steamed rice noodle roll - is one of my favorite dim sum dishes & the version at Crown Seafood never fails to satisfy (look at how fresh and glistening the noodles are!) Large shrimp, soft, pliant noodles, and sweet soy sauce are a joy to slurp! The owner, Ede, was there & she is the only one in the city that makes Hoy Tod like they do in Thailand. āDo you want hoy tod, today?ā She asked when she saw me. āYes!ā I immediately replied. We chatted about my trip to Thailand in October & I told her about the fab boat noodles I had in a Chiang Mai food market. āWe have boat noodles! You should try,ā she said. I enthusiastically replied āOk!ā And then because I was hungry, I also order Tonyās Wings, beef pad see ew (my fave rice noodles), and green mango with crispy fish salad. Thai Tea is on sale right now for just $1.50, btw ā I ended up having two. We had enough leftovers for a second meal, and my only regret? Not having any room to order mango with sticky rice (mangoes are in season). On safety: All servers were wearing masks. There is hand sanitizer at the hostess stand. The menus are laminated so you might want to bring your own sanitizer or wash hands after, but other than that, great experience. So happy to find out that @meinrestaurant is back up and running and accepting customers for in-house dining! We called ahead to make a reservation, and our table was prepared and spotless, complete with its own hand sanitizer bottle, when we arrived. All staff were wearing masks and patrons were spread out throughout the restaurant well beyond the 6 foot social distancing rule. The food was delicious and fresh as always and I was so happy to be able to sit back and relax! If youāve been craving Chinese food I recommend @meinrestaurant without hesitation. The entire environment felt so safe that I was able to take off my mask while eating without worrying about accidentally coming into contact airborne virus.
