All I want is a stack of pancakes and a vacation. Simple, right? Even better if it's pancakes while on vacation! Until then, I'll stick to these oat blender pancakes at home! You in? Ingredients 100g @thesoulfullproject Oats 1 Banana 1 cup @planetoat Oat Milk 1 tsp Baking Powder 1/4 tsp Baking Soda 1/8 salt 1 tsp @traderjoes Cinnamon 4 tbsp @pbfit 1 egg 1 tbsp @wholefoods Flaxseed Directions In a high-speed blender, blend oats until flour-like consistency, making oat flour. Add in the remainder of ingredients and blend until well combined but not over blending. Scrape down sides as needed. Let batter rest for about 5 minutes to thicken up, you want it to be pretty thick! Pour 1/3 cup batter onto a medium-low skillet that has been greased with coconut oil. Flip over once bubbles have formed and the bottom is golden brown. Repeat until all pancakes are made.
If you are what you eat... I would be a mix of overnight oats, veggies, smoothie bowls, and PB! I would say that I'm 80% plant-based. Last summer I went "vegan/ vegetarian" for a hot minute. At first, I felt great like I was on top of the world. Then I started falling flat in workouts and was recovering like crap. Why? My body needed animal protein. So, I'm back to eating chicken, fish and oaccionally pork. Fun Fact: I haven't eaten red meat in 20+ years! The moral of the story... do what works for YOU not someone else. Recent "What I Eat" food dump. I'm often asked what I eat in a day. My answer is always ... "it depends," but one thing is constant there is a lot of REAL food. You know, fruits and veggies. Otherwise, it's homemade. It's just how I roll. Once I learned how to cook, I fell in love with the process of cooking. 🍉 I eat pancakes daily. I just batch make them! 🥕 There are also eggs + veggies! 🥦 It isn't summer without a protein smoothie. 🌮 I could eat a salad every day! But I'm working on mixing things up. 🍾 I like to keep it simple! What's your favorite summer meal/dish?
YO, It's Fry-DAY! I love fries as much as the next person. So you could say I've learned to perfect my homemade fry game. While my family prefers russet potatoes sometimes I just have to switch it up with sweet potatoes. Because we eat all the potatoes. Hello, different nutrients ;) Anyway, here's my fry recipe. Just in time for #memorialweekend BBQ's! 𝗕𝗮𝗸𝗲𝗱 𝗦𝘄𝗲𝗲𝘁 𝗣𝗼𝘁𝗮𝘁𝗼 𝗙𝗿𝗶𝗲𝘀 Ingredients 2 medium-sized sweet potatoes 1 tbsp EVOO @cobramestateusa Your desired amount of sea salt & pepper Directions Preheat oven to 425 degrees. Cut potatoes in half lengthwise, then cut each side in half, again, before slicing to look like "shoestring" fries. Using a dishtowel, pat dry. Do this for roughly 5-10 minutes. You want them as dry as possible. In a medium bowl, toss potatoes, EVOO, salt & pepper. Place evenly on a parchment-lined baking sheet. Make sure there is only one layer. Place on the middle rack in the oven and bake for 40-45 minutes. You'll want to check them for around 20 minutes and flip. Let fries cool slightly and enjoy!

I love oats! Overnight oats, muffins, cookies, pancakes, baked, etc. Oats are a great way to get in a nutrient-dense meal. If you're "bulking/building" it's the perfect side to your egg scramble! Or if you're just looking for something to fuel your mornings -- This is it! It's something that you can easily meal prep too! Are you ready? 𝗖𝗵𝗼𝗰𝗼𝗹𝗮𝘁𝗲 𝗖𝗼𝗰𝗼𝗻𝘂𝘁 𝗕𝗮𝗸𝗲𝗱 𝗢𝗮𝘁𝘀 Ingredients 1/2 banana 1/4 cup nut milk 1/2 cup @thesoulfullproject oats 2 tbsp nut butter 1 tbsp maple syrup 1/2 tsp baking powder 1/4 tsp vanilla extract pinch of sea salt 1/2 tbsp toasted coconut flakes Fresh strawberries for topping Directions Preheat the oven to 350ºF. Lightly spray 2 small ramekins or 1 large one and set aside. In a blender, combine oats, banana, nut milk, nut butter, syrup, baking powder, extract, and salt until smooth and creamy. Don't be afraid to any more oats or nut milk to reach the desired consistency. Pour into the ramekins. Top with a few coconut flakes and sliced strawberries. Bake for 20-ish minutes. Let cool slightly and enjoy!
