Gluten-free (and super easy!) chocolate cookie truffles 🍫 . This is my go-to recipe when I need to bring a dessert somewhere, and I even use it for gifting. The whole process takes minutes and they are SO good. . Recipe: - 8 oz of gluten-free cookies of choice (I typically triple chocolate chunk, chocolate chip, or peanut butter cookies to make different variations!) - 2 tbs cream cheese (I get organic) - 1 cup melted chocolate - 1 tsp coconut butter or butter (to make the chocolate perfect for dipping!) . To chop up the cookies, I use my @zelite.infinity Alpha-Royal Japanese Series 6” chef knife. The Zelite knives are SO sharp and make cutting and ingredient prepping so ridiculously easy. I got the magnetic block set and also bought it for my parents and we’re all obsessed! I never realized how important having a good knife in the kitchen is - until I had them. Now I’ll never go back. 🔪 . After the cookies are chopped, pound them until they are all crumbled up (or throw in a food processor). Add the cream cheese and combine well. Form the mixture into small balls and put on parchment paper. Stick in the fridge for a couple minutes. . While that’s in the fridge, combine chocolate and the coconut oil/butter and heat the two together until completed melted. . Take the balls out of the fridge and individually dip them into the melted chocolate and place back on the parchment paper. Stick the truffles back in the fridge for a couple hours to harden and then enjoy! . “I’m feeling myself while I’m looking at myself” - Jim Gaffigan (paraphrasing but close enough 😆) . Hope everyone had an amazing holiday! I honestly can’t believe we’re almost into 2021. Since a new year is coming to a close, I always reflect on the past 12 months and begun preparing for the next year. . Obviously no one expected 2020 to be this way. Though there were a lot of horrible things that happened this year (and are still happening) I also learned a LOT. I’ve become better at adapting, and learned a lot about myself...and others. I grew and evolved personally and professionally (though I’ll always be learning, always growing). . I have set some aggressive goals set for 2021. I’m going to be better at work/life balance, taking better care of my health, and also growing as a business owner. . Though I’m not taking this week “off” - I did take some time to relax, rejuvenate, and refresh before I start working on achieving those goals. We all need some time to refresh and now I’m getting even more excited for what the new year will bring. . As part of my refresh/self-care, I got my hair done at the incredible @strandsalonct (shoutout to @jenstylesu for my color and @sandrakoper.hair for my cut) and they always do amazing work and I leave there feeling like a million bucks every time. I went home and did a clay mask and then put on some organic self-tanner to give myself a little winter glow. 💫 . Use this as a reminder that we all need to do things that make us feel fantastic once in a while. I’m excited to start the new year with the same (but constantly getting better) me. . Ingredients: 1 pound uncooked large shrimp, peeled, deveined 10 cloves garlic, peeled, finely chopped 2 teaspoons dried thyme 1/2 tablespoon chili powder 2 tablespoons oil of choice (I used avocado oil) Kosher salt, as desired Ground black pepper, as desired 2 pints cherry tomatoes 1 tablespoon dried rosemary . SWIPE 👉 for before (2017) and after (Aug 2020) 💁🏻♀️ . It’s crazy how your body will tell you something is wrong. . I’ve always had long hair. 4 years ago I noticed my hair seemed to be thinning. I didn’t think a whole lot about it except for when MULTIPLE people would come up to me saying, “OMG! You cut your HAIR?!” to which I replied “Uhh, no...I haven’t cut my hair in months.” 😳 . After multiple conversations like that - I knew something was up. It got to the point where my hair was thinning so badly that it was breaking off and making me look like I had cut 4-5 inches off. I couldn’t really style it or do anything with it - it was lifeless. . I did some research and noticed that hair thinning was a symptom of hypothyroidism. It runs in my family so that seems like a natural conclusion. . I went to multiple doctors to get tested - they all said my numbers were fine. The reality was - I knew I wasn’t fine. I was losing my hair + I was tired/low energy all the time! I knew something wasn’t normal. . Finally I went to a holistic endocrinologist who confirmed what I already knew. YES, i did have a thyroid issue. He said that the numbers that rate people on are “averages” which actually don’t apply to most people. As a “healthy” 30-year-old (at the time) - my numbers were very low. . He suggested I go on a gluten-free, refined sugar free diet. Little did I know that conversation was going to completely change the entire course of my life. . I found that my thyroid issue was due to: 1) stress levels (work) 2) poor diet / toxic things I was putting in and on my body 3) not moving my body often enough (I was working a desk job at the time) . So I started eating healthier. Reading ingredient labels. Working out more. I even started posting recipes on Instagram (aka this account!) and eventually, quit my job to work for myself. . Now only did I reverse my thyroid issue (!!) and created a career that I love, but my hair started coming back. I couldn’t be happier. . If something seems wrong - do something about it.
