There are some tips to making this top notch including using quality ingredients like ripe tomatoes, Pomi Italian tomatoes (in the carton), freshly grated Parmesan or Pecorino Romano cheese and fresh basil on top for garnish. When roasting your tomatoes and garlic, make sure to use a parchment paper or a silpat lined baking sheet. Dice a small onion and add to a low-heat pot with a tablespoon of butter*, add in your red pepper flakes and stir until soft and translucent (about 5 mins). Add in your carton of crushed tomatoes, stir and let simmer until your roasted tomatoes and garlic are done.

Now, in the age of Covid, we have to get a little more creative with date ideas, (mainly at home) since most attractions are closed or operating at limited capacity. If you have a coffee table, set it up in your living room with a tablecloth, light some candles, break out the fancy silverware and enjoy an intimate date night (or day), all from the comfort of your home. Pick a destination you’d both love to go to some day (Italy, France, Mexico, etc.) and create a themed night like you’re there. For example, pick up something that is their favorite color, their favorite food/snack, something they need, something that reminds you of them and an activity to do together.

As humans we crave in-person interactions, I can’t wait for the day we can hang out with our friends and family closer than six feet and not have a mini panic attack every time they cough or sneeze. Surround Yourself w/ the Right People – …if you surround yourself with people who are equally anxious about situations as you are, you’re going to drive yourself crazy. Thinking back to the beginning of the pandemic, yes there were people fighting over toilet paper, but there were also people delivering meals to healthcare workers and those in need, neighbors checking up on each other, and people helping any way they can. Even if it’s not being reported on in the media, there are good people in this world and feel good stories emerging every day.
