Campari tastes like bitter orange and grapefruit with a background of complex red fruits, herbs and spices. Its' mellow cherry and berry notes are backed with subtle hints of cinnamon and botanicals that are swept away with bright citrus leaving a pleasantly bitter aftertaste. The only ingredients we know for sure are water and alcohol, and all Campari discloses is that the flavor comes from an "infusion of bitter herbs, aromatic plants and fruit". It's one of the key components in the family of bitter red cocktails that include classics like the Negroni and the Americano.

A combination of equal parts lemon and lime gives a full flavored tartness to the Dr. Funk that goes so well with absinthe. To balance out all that citrus you need to add some sweetness in the form of grenadine and simple syrup. Overall the drink still comes off as slightly tart and dry, but you still need to add the cocktail syrups to keep things in check. When one of the famous Tiki founders, Don Beach opened his first Tiki bar the drink was on the menu as a more tame version with a light rum added to the mix.
