Holy cow people! I think I did it! After making those pumpkin cookies last week, I couldn’t stop thinking about an apple cider version. I love pumpkin as much as the next Fall lover. But Apple everything will always have my heart. I made some boiled cider last week (game changer!) and wanted to use it in something. So, Apple cider cookies! However, it did take some (gross! Not good at all) trial and error. But, I think I did it. Ans maybe, just maybe these will make it onto the blog. I have a new recipe for you all! What?!? I know it’s been a while. But these seem like a feat way to get back into the swing of things! These are perfect for back to school. They are delicious and filling and perfect to have ready for a quick breakfast before school. Brown sugar Oatmeal Muffins 1 1/2 cups all purpose flour 1cup old fashioned oats 1/2-3/4 cup brown sugar (not packed) 2 eggs 1cup milk 1/2tsp salt 1tbsp baking powder 1 1/2 tap cinnamon 1tsp vanilla Directions: Preheat oven to 400°. Grease cups of a 12 cup muffin pan well, OR line with paper muffins cups and spray with nonstick spray. In a medium bowl combine dry ingredients (flour, oats, cinnamon, brown sugar, baking powder and salt). Set aside In a small bowl whisk together the wet ingredients (milk, eggs, vanilla) until light in color. Add wet ingredients to the dry and gently mix just until combined. There may be lumps and that’s ok! Do not overmix. Fill each muffin cup about 3/4 full. Do not fill to the top or they will overflow during baking. Sprinkle a pinch of brown sugar (or turbinado sugar) over the top of each muffin. Bake for 15-20 minutes. Check at 15. Muffin tops should spring back with gently pressed. Allow to cool for 5 minutes, then remove from pan and cool on a rack. Sometimes we just need that reminder. Koa wrote this for me just at random, and i stuck it here in the car. And everyone I get it it just makes me smile. When he is driving me nuts from the backseat, I look at this and smile. When I get in the car alone to run a million errands, I see it and smile. When I am in the car alone because I just need a moment. I see this and smile. Three simple words, written in 8 year old handwriting, bring me so much joy during the day. And remind me I am doing something right. Happy Monday!

I underestimated the quiet. There is usually all kinds of noise. Whether it’s brotherly arguing or laugher. Sometimes it’s singing to Hamilton, or roaring dinosaurs or zooming cars. But right now it’s just quiet. They are both in school. They are both loving it. They jump out of the car and run to the playground to see their friends and I know they are having a blast. But I still miss them. And the quiet is deafening. So, what do I do? I paint a wall black. I listen to murder podcasts and paint a wall black. Checking that off the list of projects and moving on to the next. And now I will mop the floors and enjoy the fact that it will stay clean for longer than 10 minutes. I have 3 hours in fact until a roaring dinosaur will drop crumbs on the newly mopped floor. But that’s ok. Because much as I hate to admit it, I miss it. Soooo… Onto the next project! Do you have any house projects in the works?

When did this happen?! I have a kindergartner and third grader this year! One walked in the building and said bye as soon as possible (3rd grade 🤪) and then the other gave me a kiss and told me it was ok for me to leave. Did I cry. Yes. Yes I did. But he has been waiting for this day since he was 3 years old. I cannot wait to hear the stories after school. Have your kiddos gone back to school yet?!

Anyone watch Best Baker in America finale? If so, THESE are real malasadas. (From @kauaibakery !) That whole episode drove me nuts. They said it wrong (don’t get me started on how they pronounced haupia!) and I can’t figure out how they made actual malasadas and haupia and other stuff authentically in like 2 hours. (Hint…they didn’t) If it’s going to be on national television, I feel like maybe they should know how to pronounce it correctly, and maybe don’t act like experts on taste, texture, and the like if you don’t actually know what it is. Happy birthday to this little guy. 6 years old today! How on earth did that happen?!

It’s no secret that around here we LOVe the @playosmo games. One of the new ones, Secrets of Dragons, as been a definite hit. Searching for dragons, feeding them, determining what they eat and raising them all while learning STEAM concepts as been so fun! Koa was working on measurement at school and the game correlated perfectly! Kai loves hatching new dragons and finding them in his Dragon Guidebook. But, because Osmo is always looking for new fun ways to get kids interested and learning about STEAM concepts and using screentime for fun learning, they have some NEW Math Wizard quest hatching soon! I grew this!! Ok. This is a huge moment. Because previous to now, I couldn’t be trusted to keep a houseplant alive, let alone a vegetable garden. No, seriously I somehow managed to kill a rosemary plant a couple years ago. Rosemary is notoriously easy. Then, this winter Kai expressed interest in a garden. So I started researching square foot gardening, since I wanted to start small. Especially since truth be told I fully anticipated nothing growing. 🥴 But, we have it a shot. Seeds were natures indoors, then planted outside. And nothing died! Instead, we have lettuce, bell peppers, tomatoes, onions, basil (3 kinds!) cilantro, butternut squash and spinach! Oh, and Kai added a watermelon plant this weekend..we’ll see how that one goes! The zucchini had a flower bloom this morning and we harvested a ripe red bell pepper! Kais joy every morning is going out to check and water our garden, and I love that we are doing this together. Also...I didn’t kill anything!!!!!! 🤣🤣 Do you have a spring garden going this year?!
