To help them to understand what the disease is, how to live their best lives and how to lessen the tough emotions stemming from Celiac Disease. I LOVE having a 504 Plan for my kids with #celiacdisease and here's why: ⁠ ⁠ ✨Having a 504 plan helps educate the faculty and staff about celiac disease. It also keeps them accountable for helping my children with their needs. ⁠ ⁠ ✨It gives me peace of mind knowing that my kids are protected while they are away from home! ⁠ ⁠ ✨It establishes a plan for the school year and for emergencies. For example: Our plan sets the standard that there will always be a #glutenfree emergency bag in my child's classroom. That way if something were to happen-they will have safe options at hand!⁠ ⁠ ✨A 504 plan allows my children unlimited bathroom trips when needed. This one is super important with Celiac disease! ⁠ ⁠ ✨I know with a 504 plan, my child will never be alone! When the class gets cupcakes for a birthday party, the teacher is required to give me 24 hour notice so my kid can eat a safe treat and never miss out. Isn't that AWESOME!? ⁠ ⁠ A 504 plan isn't for everyone, but I know that it has been a blessing in my family. WHO ELSE CELEBRATES TACO TUESDAY?!⁠ ⁠ At my house we LOVE making tacos because they can easily be made gluten and dairy free! Plus, there are so many different variations that you can do when it comes to preparing them!⁠ ⁠ Today I am highlighting two different recipes in my stories that have been GAME CHANGERS for my family when it comes to making Taco Tuesday even tastier! ⁠ ⁠ First is my guacamole recipe! My kids LOVE it-and it is an easy way to add some flavor to the dinner table. ⁠The great thing about it is that you can customize the ingredients to your taste/liking!⁠ ⁠ Second is my HOMEMADE GF Taco Seasoning! I have found that it is SO much easier to make my own taco seasoning than risk getting glutened with any other store bought brand. Is there anything more perfect than warm cinnamon rolls? ....GLUTEN FREE Cinnamon rolls of course! ⁠ ⁠ Back by popular demand, here is one of my all time favorite recipes! This recipe +15 more are included in your purchase! ⁠ ⁠ Coral's Gluten Free Cinnamon Rolls: ⁠ (Makes 15-24)⁠ ⁠ 💛 Rolls⁠ ⁠ 1/2 Cup Warm Water⁠ ⁠ ⁠2 TBS Active Dry Yeast or⁠ ⁠1 1/2 TBS Instant Yeast⁠ ⁠ 2 TBS Sugar⁠ ⁠ 1 Small 3.4oz Box Vanilla Instant Pudding Mix (make with Silk vanilla unsweetened milk for dairy free)⁠ ⁠ 1/2 Cup Butter, Melted (or @miyokoscreamery dairy free butter)⁠ ⁠ 2 Large Eggs⁠ ⁠ 1 Tsp Salt⁠ ⁠ 6-7 Cups GF Flour Blend (@namastefoodsllc is our fave)⁠ ⁠ 💛 Filling⁠ ⁠ 1 Cup Butter, Room temp (or Miyokos dairy free butter)⁠ ⁠ 2 Cups Brown Sugar⁠ ⁠ 3 Tsp Cinnamon⁠ ⁠ 💛 Frosting (use premade dairy free frosting)⁠ ⁠ 8oz Cream Cheese⁠ ⁠ 1/2 Cup Butter (Room temp)⁠ ⁠ 1 Tsp Vanilla⁠ ⁠ 3 Cups Confectioner's Sugar⁠ ⁠ 2-3 TBS Milk⁠ ⁠ In a small bowl combine water, yeast and sugar. Stir until dissolved. Set aside. ⁠ ⁠ In large bowl, take pudding mix and prepare according to directions (use room temp milk to help it rise faster). Add butter, eggs and salt. Mix well. Then add yeast mixture. Blend. ⁠ ⁠ Gradually add flour, knead until smooth. Do not overflour the dough. It should be soft but not sticky. Place in a greased bowl. Cover and let rise until doubled, about 1 hour. ⁠ ⁠ Roll out dough on a lightly greased or floured surface to about 34 x 21 inches in size. Take 1 cup soft butter and spread over rolled dough. ⁠ ⁠ In bowl, mix brown sugar and cinnamon. Sprinkle over the top. Roll up very tightly. With knife, put notches every 1/2 inches. Cut with thread or serrated knife. TIP: Dip knife in hot water for easy slicing!⁠ ⁠ Place on lightly greased cookie sheet 1 inch apart. Cover and let rise until dough has doubled again. ⁠ ⁠ Bake at 350 degrees for 20-25 minutes. Remove when they start to turn golden. ⁠ ⁠ Combine butter and cream cheese and mix well, then add vanilla and sugar and mix again. Add milk for desired consistency. Frost over warm cinnamon rolls.⁠ ⁠ LIKE, SAVE, AND FOLLOW FOR MORE! ❤️⁠

I NEVER go to someones house and expect them to feed me or expect them to know how to cater to my needs. if they do-it ends up being SO amazing and extra special. ⁠⁠ ⁠⁠ But if they don't, that's okay because I got me and my kids covered! We are GOOD! I am Coral and my kids and I are Gluten free! Gluten free doesn't define me-that isn't all I am. It's just a small part of me, and that's okay! ⁠⁠ ⁠⁠ So let's go throughout life and spend our time thinking about the connections we make with others OVER the food we eat when we spend time at parties. ⁠⁠ ⁠⁠ When we find ourselves in situations centered around friends and food. Don't be fixated on what you are going to eat all the time-choose to be fixated on the people that you are going to meet! Spend your time fostering the relationships around you and trying to be a better person. ⁠⁠ ⁠⁠ We can be so much better in all the ways when we aren't focused on food all of the time!

It’s the stash of Gluten Free snacks that gives it away for me 🤣 ⁠⁠ ⁠⁠ This is no ordinary bag-it’s my lifeline: My Gluten free bag! Equipped with all of the essentials I may need when I’m on the go. ⁠⁠ ⁠⁠ Here are some things I always keep in my GF bag! ⁠⁠ ⁠⁠ 1-All of the GF snacks that can hold me over until I am able to find a safe meal-protein bars, Annie’s GF Mac N Cheese, nuts, chips, an apple, etc. ⁠⁠ ⁠⁠ 2-DigestZen essential oil. I use this any time my tummy starts hurting and it helps SO much! ⁠⁠ ⁠⁠ 3-Sanitizing wipes to make sure the areas where I may eat or stay at are clean and safe from gluten ⁠⁠ ⁠⁠ 4-Personalized Celiac handouts for each of my kids explaining their dietary and health needs! We had a blast participating in the gluten free portion of @utahtasteoff ❤️⁠ ⁠ I mean just look at how happy my kids were getting to indulge and share gluten free sweets!
