Is focaccia art still a trend? I absolutely love baking bread. I know so many people are hesitant to work with it, but I’m telling you this is the bread for you to try. 🍞 Focaccia is the second bread I ever made (after my braided loaf). If I’m short on time I often whip up pizza dough and turn it into focaccia. It’s that easy. Bonus: it’s plant based 🌿 This time I wanted to try @sallysbakeblog focaccia and let me tell you it turned out phenomenal. Like we polished this off in one sitting good. The key to really good focaccia, in my humble opinion, is a generous amount of GOOD olive oil (tagged the brand I use below), and a good long rest in the fridge. Use a nice coarse salt like @maldonsalt and fresh rosemary for a beautiful savoury flavour. The holidays are meant for baking. There’s something about the cold weather, and of course all the family time, that makes use want to bake up sweet memories with our loved ones. When @heelas_kitchen invited me to a holiday cookie collab, I knew I had to make these delicious s’mores cookies! My kids love marshmallows, who doesn’t?, and they had a great time eating all the marshmallows.. err baking with me 🤷🏽♀️ The rockstar cooks and food photographers taking part in this collaboration are: @heelas_kitchen (host) @kitchen_diaries_by_zubda @mahamalavi @_krithika Run, don’t walk, and check out what they’ve made. Ingredients 1 cup (250mL) GAY LEA - Unsalted Butter, softened (I doubled this amount, bc who doesn’t love more butter!) 1 cup (250mL) granulated sugar 1/2 cup (125mL) brown sugar 2 eggs 1 tsp (5mL) vanilla extract 3 cups (750mL) all purpose flour 1 tsp (5mL) baking soda 1/2 tsp (2mL) salt 1 1/2 cups (375mL) dark chocolate chips 1 cup (250mL) mini marshmallows 6 graham cracker, coarsely chopped Instructions Preheat oven to 350ºF (180ºC). Using electric mixer, beat butter with granulated and brown sugar until light and fluffy. Beat in eggs and vanilla just until combined. In separate bowl, stir together flour, baking soda and salt; beat slowly into butter mixture. Stir in chocolate chips, marshmallows and graham crackers. Shape dough into 24 balls; place on 2 parchment paper–lined baking sheets, about 2 inches (5 cm) apart; flatten slightly. Bake, in batches, for 10 to 12 minutes or until golden brown around edges and gooey in centre. Let cool in pans on racks for 5 minutes. I love lasagna! I mean, who doesn’t! 🍝 I’ve made it several times, several ways, and this version is my all time favourite. 🙌🏽 Not only do the layers cut beautifully (swipe for a cross sectional shot 😍), the flavours are on point. I’ve cooked the ground beef in seasonings that lend that Italian sausage flavour without needing to find halal Italian sausage. 🧀 The ricotta layer is seasoned, and speckled with spinach for a sneaky addition of veggies your kids won’t notice - but will love! 🫕 I’ve found that using three types of cheese make for the perfect creamy lasagna, and a forth for that mouthwatering cheese pull we all love to see. 🍅 A major player in making your lasagna delicious is the sauce. I highly recommend finding a homemade sauce, making your own, or store bought that tastes like fresh tomatoes. 👩🍳 Making your own sauce is as easy as simmering a can of whole Roma tomatoes, adding in basil, fresh garlic, some oregano and carrots for sweetness. Season with salt and blend it up to hide the carrots. Alternatively, add some sugar for a hint of sweetness. 🌿 Also: I par boil my lasagna sheets. This is a personal preference, but I feel more in control of how much sauce I’ll need if the sheets won’t absorb as much. 👌 Before I share the recipe, do you have any tips or tricks for the perfect lasagna? What’s your favourite snack to compliment a good cup of chai? This cream cheese raspberry sweetbread is an all time favourite of mine. Sweet enough to satisfy a sugar craving, subtle enough to be had with breakfast, brunch, or after dinner. When it snows I need warm, comforting food. Come to think of it, my version of comfort changes with the seasons, rainy spring weather makes me crave spicy pakoras, summer has me wanting bbq, fresh salads and lighter meals, and fall and winter call for soups, stews, cozy chicken roasts and pasta bakes. If you ask me, everyone needs to make this chicken tikka masala today. It’s quick and easy, like pretty much all my recipes - cause that’s just how I do. You need to try this Pizza! Last week, I was invited to try @masemobyparamount - a new concept by the owner of Canada’s Best Lebanese restaurant, Paramount Fine Foods @ceo_mohamad.paramount and Canada’s Best Pizza Chef @chefcapra serving up a fusion of authentic Italian pizza and manakeesh - and it’s all 100% halal 🎉 The name MAS E MO, a fun play on words, translates literally from Italian to MAS AND MO, combining the names of Chef Capra (Massimo) and Mr. Fakih (Mohamad) Before I get to the food, I have to applaud the staff. I was received with a warm welcome as soon as I entered, regional manager @mrsabeh and head pizza chef @as_whiteee went above and beyond to make me feel at home, their hospitality is unmatched. You can be sure you’re getting authentic Italian pizzas, everything from the dough to the sauce and every measured ingredient is created by Chef Massimo Capra. This is the pizza all halal eaters have been waiting for! On the Menu are both traditional Italian and traditional Lebanese flavours, making the perfect fusion menu - I tried the Calabrese Spicy Salami, Margarita and my guest the Arabella - we also enjoyed their delicious Arancini and ceaser salad topped with basterma. We ended off with the most creamy, delicious cheesecake from the one and only @lailascheesecakeco - the entire meal was straight out of heaven. I got you 😉 This easy chicken tetrazzini checks all the boxes: ✅ quick ✅ easy ✅ kid approved ✅ delicious 👌 What more could a mom ask for (there are veggies and chicken in here too, mamas) 🥦 Make this easy recipe, tag me, share with anyone who needs a bowl of comfort as we dip into the single digits 🥶 •20 Minute Chicken Tetrazzini • 271 grams (about 2/3 box) of @barillacanada spaghetti, boiled to al dente in salty water- save 1 cup of pasta water Do not rinse the pasta, this helps the sauce stick 1T flour 4T unsalted butter 1 veggie or chicken bouillon cube dissolved in 1/2 cup water OR use. broth (and not bouillon) Black pepper 1/2T dried thyme or 2 sprigs fresh 2T grated parmesan, as always I use @trestellecheese (it’s halal) 1 cup half and half cream (10%) 1/4 cup heavy cream (35%) Veggies of choice, I use: sliced mushrooms, red bell peppers, broccoli, onions (not optional you need these for flavour) Pinch nutmeg 3 medium/large cloves garlic 1 medium/large chicken breast Salt and pepper for the chicken Optional: Chili flakes or chili oil Fresh parsley • start by heating a pan on high heat, turn down to medium once it’s heated. • season the chicken with salt and pepper, add 2T butter to the pan, followed by the chicken. • Cook until done, about 4-5 minutes per side. Remove and set aside - do NOT cut into it yet! * in a large (12 inch) and deep skillet on medium high heat, add 2T butter and minced garlic. Add when the skillet is in a cold state. The garlic will cook better, and not burn. * After about 30-60 seconds, add in 1T flour and cook until slightly golden, now add in the veggies and sauté until tender crisp. * Add in the creams and simmer on medium, until slightly thickened. * Now add the broth/bouillon and water. Again, simmer until slightly thickened. * Add in the thyme, black pepper, nutmeg and Parmesan cheese, mix well and add the pasta. * Slice or dice the chicken breast into bite sized pieces. Add to the pasta, mix well to combine. * If needed, add pasta water 1T at a time to loosen the sauce if it’s too thick. More ⬇️ #thewayweeat#foodtographyschool

Confession time: Growing up, I rarely ate rice 🙊 Chapati was my go to with Indian meals, and during the day I’d have paninis, pasta, wraps - anything but rice. 🥯 Now? Give me all the rice. All.of.it 🍚 Rice is such a beautiful blank canvas for a cook. 🧂 Season it with salt, add some oil or butter and you have a simple side to soak up a spicy curry. 🍛 Sauté some onions, add in crushed tomatoes and a few spices, and you’ve got a flavourful dish perfect with a Sunday roast 🍗 You can even grind it up and turn it into a pita! 🥙 Or do what I do when I feel like a hint of herbiness with my bbq, hummus and pita: add all the herbs (well, not all but I’ll share what I did soon 😉), top with pomegranate, and enjoy!
