We lost my father yesterday due to this COVID-19 virus. He was 94, diagnosed with the virus over a week ago and a resident at Father Baker Manor in Orchard Park NY. A tremendous loss to everyone who knew him. We are in mourning because it is us who will suffer not having him in our lives. . . I am grateful for the team at Father Baker Manor. They called me every day giving me updates the past few weeks, I was able to talk to him a few weeks ago with the nurses help. Also had a nice long conversation with the sister yesterday about my Dad and she said he was truly a remarkable soul. She's right, he would give the shirt off his back so others could have more. . . He would say "don't mourn me celebrate me. I'm 94, I had a long life and accomplished many things in life. Live your life, listen to music, go camping whatever you do don't stop moving." We know these are scary and uncertain times. My family and I usually have an Easter gathering every year. Lots of food, easter baskets, etc. This year it'll just be the 3 of us. We'll have our french toast placek for breakfast, Pierogi for dinner but alot smaller than in the past. We're sad we won't be with family. At the same time we're looking forward to having an intimate gathering and not having to entertain or travel to other family's house. See link in our profile. 🥟 It's always been the two of us working on Pierogi. Myself (Darlene) and Patrick. We thought this would be the year we could hire people but the COVID-19 has different plans for us. For all of us. 🥟 This is a scary time for everyone. I'm immunocompromised due to the diabetes so I'm distancing myself from family, friends, customers, etc. My health has been good overall for awhile. The problems I have run into the past year are dietary problems which flares my pancreas. Other than that I've been fairly healthy. My son Patrick is young and very healthy. 🥟 If either one of us starts to show signs of COVID-19 symptoms then of course we will have to shut down. We will definitely keep you updated whether it's our health or government initiated. 🥟 We already have deep cleaning sanitation efforts in place by sanitizing everytime we prepare Pierogi and once per week we perform a deep cleaning. We wear gloves, hats and aprons. Our produce is always scrubbed and soaked in vinegar and water. We Always have this in place. 🥟 However, we have implemented triple washing our produce, wearing masks when we prepare the Pierogi and no one is allowed in our business except us, health officials and the owner of the building. 🥟 We Thank you for your support during this difficult time. This is our first test Pierogi using local NYS ingredients and it came out so good! The whole wheat dough fried up in the frying pan perfectly. We're still testing. Next we're baking them and using an air fryer cause we know alot of our customers love thier air fryer! . Mushrooms from @flat12mushrooms is ridiculously delicious! . . This soup is pure essence of mushroom 🍄 Caramelized with onions, garlic, thyme and coconut milk then pureed. We used this to make Lazy Pierogi. Nothing lazy about this dish tho, maybe more of a deconstructed Pierogi 🤷‍♀️ Definitely not typical or traditional tasting but neither are we 😁 We loved it and we're still testing. You haven't really heard from us in a while. Sure we share pictures of our Pierogi or our branding but we haven't really given any updates, etc. So let's give you all an update of what's been going on with Yeah! Pierogi : . We always have a plan but not always do we share our plan because things change ... constantly! Sure we have a core business plan but we're constantly updating this plan whether it's ideas from customers, business partners, friends, family .... we're always listening. . Something that we've been working on is sourcing local ingredients from NYS to create a Pierogi that we can say is not only made in NYS but also sourced in NYS. The most challenging part was finding locally grown and milled flour but we did find it! Next step is testing it which we are doing this week. . Some ingredients cost more since it's local and from smaller companies. We figured the cost of using these ingredients and we can still offer an affordable product. Which is super exciting!! . In addition to sourcing local ingredients we are also creating a few Pierogi to eliminate oil by substituting it with beans which adds fiber, vitamins and minerals. We use mashed beans in place of oil in our baked goods at home and it's worked well over the years. We tested this in our Pierogi and it works like a charm! . We are working on making other things as well like our own sauerkraut (currently testing), vegan kielbasa, rye bread, cabbage rolls .... to create that polish platter with tastes we enjoy, keeping it healthful with local vegetables snd making everything from scratch. It's important to us. . As for Farmer's Markets this year we will be offering Ready Made Meals in addition to our frozen Pierogi. Using the products we are currently creating and testing. . With that said we will probably be hiring this year. Not sure when or how many people. Our business is slowly growing and with what we're going to offer this year we'll need extra hands in the kitchen and at Farmer's Markets. So if anyone is interested let us know.
