Highlights
  • Easter Chocolate Treats: CookBlogShare 2021 Week 13

It’s a three layer chocolate cake filled and covered with vanilla buttercream, decorated with a chocolate ganache drip and lots of Creme Eggs. Although it’s a great all year round cake, it’s topped here with pretty pastel mini eggs. Whether you’re looking for a showstopper cake for the Easter holidays or simply a way to use up leftover Easter eggs and chocolates, this Easter chocolate traybake cake with super simple vanilla sponge and whipped chocolate ganache is a sure-fire winner. What you can expect I will endeavour to visit every post that’s linked up this week and pin the recipes to the Pinterest #CookBlogshare board.

  • Oca Latkes (Fritters or Pancakes): Two Ways

How to Prepare Ocas for Cooking If you buy ocas they should be fairly clean, so will only need a quick rinse in a bowl of water. Although they’re best served hot from the pan, it’s fine to keep them in a warm oven for thirty minutes or so. Remove the lid and fry for a further two minutes to make sure any water evaporates and the rosti is crisp. The easiest way to remove the water from the grated oca and onion, is to squeeze it in a clean tea towel or muslin cloth.

  • Baked Harissa Popcorn Tofu

Extra-firm tofu does save time but either firm or extra firm are good options for savoury dishes. I flavour the mayo with rose harissa, but any harissa would work. If you don't have harissa, here are a few other ideas of how to flavour mayo for popcorn tofu. If they are not keen on spice you could flavour the mayo with harissa for a bit of flavour and warmth without heat, or try one of the other alternatives I shared above.

  • Vegan Hot Cross Buns for Easter Deliciousness

How To Make Vegan Hot Cross Buns From Scratch Traditional hot cross buns are made with butter, milk and sometimes eggs. The method isn’t really that much different from making traditional hot cross buns, except it’s a bit easier. It’s traditional to use currants for hot cross buns. Like most yeasted bakes, hot cross buns require a hot oven.

  • Green Flatbreads With Wild Garlic And Nettles

I like to use a mix of nettles and wild garlic as I think it makes the best flavour combination. If you’re not quite sure what wild garlic, or ramsons as it’s also known, actually is, take a look at my wild garlic pesto post. Unless you’re happy to grasp the nettle firmly and pick them with your bare hands in CT fashion, it’s best to wear rubber gloves or snip them into a basket with a pair of scissors. Whilst it’s best to handle raw nettles with gloves, the sting completely disappears once they’re cooked.

  • Vegan Jaffa Orange Loaf Cake

The easiest way to line a loaf tine is to use a loaf tin liner. To hold the loaf liner in place I rub a little dairy-free spread around the inside of the loaf tin near the top, before popping the liner in. After a few disasters with baking paper, I now use double-sided pre-cut baking parchment which is coated on both sides, so you can never use the wrong side and end up with cake stuck to the paper. Grease the loaf tin, then cut a piece of baking paper the length of the tin that's long enough to go up the side and no higher than2 cm higher than the tin.

  • Baked Yeast Doughnuts: Light, Fluffy and Flavourful

Because I use wholemeal spelt flour, you only need to knead the dough for about five minutes. Although there’s not a lot of hands-on time required, you’ll need to allow about an hour for the dough to prove and double in size. Doughnut dough has very little sugar in it, so unless you fill your doughnuts with jam, ice them or coat them with sugar, you won’t be getting a particularly sweet treat. You don’t need a doughnut mould or pan to make these baked doughnuts, but it makes life a lot easier if you do.

  • What Microwaves Were Made For!

A mug cake is basically a cake that is baked in the microwave instead of the oven. Mug cakes and puddings can be served in the mug they are baked in, but you also might want to plate it up in a bowl with custard or cream. Serve them with a dollop of flavoured vegan ice cream, depending on the cake flavour. This microwave recipe is the prefect treat-size cake made in a few minutes.

Parsnip and Potato Mash: Skin-On and Dairy-Free

How to Cook Parsnips and Potatoes for Mash Chop the potatoes into chunks and the parsnips into slightly smaller chunks. It’s best to drain the veg as soon as they’re done so that the potatoes, in particular, don’t absorb more water than they need. How to Mash Parsnips and Potatoes I add a good quality extra virgin olive oil instead of butter / cream and also include plant-based milk. Both are an essential component if you want delicious fluffy and creamy mashed potatoes with parsnips.

  • Microwave Golden Syrup Sponge Pudding (vegan mug cake)

Sticky golden syrup sponge pudding, baked in the microwave in 2 minutes. Soft and fluffy vanilla sponge with a rich, toffee sauce thanks to the golden syrup. The sponge is so fluffy and that sticky, syrupy sauce sinks right through the pudding to the bottom, so you get some toffee syrup with every spoonful.
