🌟 "Nutella" Cookies (GF/DF) 🌟 Take a look at these nutty and crispy cookies! I used a recipe by @nationalceliac, which is below. Their recipe calls for Nutella, which contains dairy so I used the next best thing- Justin's hazelnut to make these cookies! Visit them for any gluten free related questions, they are an amazing and helpful group! . . . Ingredients: 1 cup Nutella or if you are dairy free Justin's hazelnut spread 2 Tbsp brown sugar 1 egg 1/2 cup + 1 Tbsp GF flour Coarse sea salt, for sprinkling Directions: Preheat oven to 350 degrees. Combine all ingredients except salt in a large bowl with electric mixer until well combined. Place dough in freezer for 10 minutes. Roll dough into approximately 1-inch balls, place on ungreased baking sheet at least two inches apart and bake for 8-10 minutes. Remove from oven and let cool for a few minutes until cookies are set, then very carefully transfer to a wire rack. 🌟 Onion Rings (GF/DF) 🌟 💥Crunch, crunch! 💥 Do you hear that? That's just me taking a huge bite! It could be you too - you can whip up these crunchy delights in less than 35 minutes! Recipe is by them, as well! . . . 1/4 cup GF flour 1/4 tsp garlic powder 1/4 tsp dry mustard 1/4 tsp salt 2 large onions, cut into ¼" rounds 1/2 cup buttermilk (check below for a DF substitute) 1 cup seasoned GF breadcrumbs Another substitute for buttermilk: 1 large egg 1/2 cup almond milk 2 tbsp vegan butter, melted 1/2 cup gluten free flour (Credit to @growagoodlife for partial recipe) Preheat oven to 400 degrees. Coat a large baking sheet with foil and then spray with pam. In a large baggie, combine flour, garlic powder, mustard, and salt. Add onions and toss to coat. Pour buttermilk (or substitute) into a large bowl, add onions. With a fork, dredged the onions into the batter, coating evenly. In another bowl, add breadcrumbs and coat thoroughly. Transfer onions to baking sheet. Bake until golden brown, 35 minutes. 🌟 Airfryer Chocolate Chip Cookies (GF/DF) 🌟 These cookies were SO easy to make and pop in the airfryer! They turn out to be deliciously crunchy! 😍 I added Justin's peanut butter cups to the mixture! 🤤 *I'm hoping to make a paleo version soon* . . . Makes about 8 cookies (drop 4 cookies dough in air fryer per batch, depending on how big your airfryer is) 2/3 cup Bob's Mill 1:1 gluten free flour 1/4 teaspoon Bob's Mill baking soda 1/8 teaspoon salt 1/3 cup light brown sugar 1/4 cup of vegan butter, soften 2 tablespoons white sugar 1 egg yolk 1 tsp almond milk 1/2 teaspoon vanilla extract 1/4 cup enjoy life semi-sweet chocolate chips 3 mini Justin's dark chocolate peanut butter cups, chopped Preheat air fryer to 350°F (180°C). Whisk flour, baking soda, and salt together in a small bowl. Set aside. In another bowl, beat brown sugar, milk, butter, and white sugar until fluffy. Add in and whisk egg yolk and vanilla extract. Stir flour mixture into butter mixture until dough is just combined; gently fold in chocolate chips and peanut butter cups. Use a cookie scooper to scoop the dough out, and then ball the dough with your hands. Place 4 balled doughs in the airfryer basket. Press down slightly on the dough with your fingertips, making it slightly flat. Cook the dough at 350 degrees for 5 minutes. Transfer to a wire rack to cool. Repeat with remaining cookie dough! Serve with almond milk for a complete snack! 🥰 . . . The perfect treat for Halloween, just look at the colors! 😍 They are great balance of sweet dark chocolate and the mellow/tart taste of the orange makes this cookie delicious! I absolutely adore chocolate and orange together, and if you do too, this cookie won't disappoint! 😍 Ingredients: Makes 40 cookies 1 cup softened vegan butter 2/3 cup packed light brown sugar 2/3 cup white sugar 2 eggs Juice of half a large orange Zest of a large orange (divided) 2 1/4 cups Bob's Mill 1:1 gluten free flour 3/4 cup unsweetened dark chocolate cocoa powder 1 tsp baking soda 3/4 tsp salt 1 cup enjoy life mini chocolate chips Directions: Preheat the oven to 350°F and line two baking sheets with parchment paper. In a large mixing bowl, use a electric mixer to mix the butter, brown sugar, white sugar, until fluffy. Add the eggs, orange juice, and 1 tsp of zest then mix again. In a separate small baking bowl, stir the flour, baking soda, dark chocolate cocoa powder and salt together. Then, while mixing, gradually pour the flour base into the wet ingredients (stir until you see no flour- try not to overmix). Gently fold in the chocolate chips. Use a cookie scooper and scoop out the dough onto the baking sheets, set the dough 2" apart (about 6-8 cookies per tray). Sprinkle coarse salt and orange zest on the cookies. Bake for 7 to 9 minutes. Transfer cookies to a wire rack to cool (10 minutes), they will firm up cooling down. Repeat with remaining cookie dough. Simply enjoy with some almond milk or by itself! 🥰 . . . 🌟Dark Chocolate Muffins (Paleo)🌟 I know, I know! I'm on a muffin kick right now! I've been doing paleo for 4 weeks now. I feel great with using natural sugars such as maple syrup! 🍁 🥰 . . . Ingredients: 2 large eggs 1 cup pumpkin puree 3 tbsp coconut oil, melted 1/3 cup maple syrup 1/2 tsp vanilla extract 2 cups almond flour 1/4 cup unsweetened dark cocoa powder 1 tsp baking soda 1 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp ginger Directions: Preheat oven to 350⁰. Grease muffin pan with coconut oil. Combine wet ingredients together in a big baking bowl. In a separate bowl, mix together dry ingredients. Pour the dry ingredients into the wet and combine well. Pour the batter evenly into the muffin pan (i just used an ice cream scooper). Bake 22 to 24 minutes until the toothpick comes out clean. Cool on a rack for 5 minutes, enjoy! 🌟 TIP: Use fresh, chopped strawberries with a little maple syrup. Simmer a small saucepan with strawberries and maple syrup on low, stirring consistently. "Dress" your dark chocolate muffin for a dessert, serve warm! It's made with almond flour, pumpkin, blueberries, eggs, and baking soda! 😍 2 1/2 cups almond flour 3/4 tsp baking soda 1/2 tsp salt 3 eggs 1/3 cup pumpkin puree (get the kind that is unsweetened, pumpkin only) 2 tbsp maple syrup 2 tbsp coconut oil 1/4 cup water 1 tsp vinegar (white or cider) 1/2 cup blueberries Preheat oven to 350⁰, get a 12 cup muffin pan, lined with paper cups or grease with coconut oil. Mix dry ingredients (flour, salt, baking soda). In a separate bowl, mix wet ingredients (except blueberries). Pour the wet into the dry and mix. Gently add in blueberries. Pour the batter into equal parts into the muffins pan. Bake for 18 minutes. Let it cool for 10 minutes. 🌟Sweet Potato Brownies (Paleo)🌟 These are sooo good! I made these gluten free and dairy free a while back. They can easily be made paleo too, so here is a recipe! 1 1/2 cup mashed sweet potato 1/2 cup smooth nut butter 2 eggs 1/4 cup dark chocolate cocoa powder 2 tbsp coconut sugar 1/4 tsp baking soda 1/2 cup chocolate chip (chop up Hu Chocolates or use enjoy life chocolate chips) Pinch of coarse salt (sprinkled on top) Preheat oven to 350⁰. Prepare a 8x8 pan with parchment paper. Poke holes in a large sweet potato. Microwave on high for 5-6 minutes on one side, flip over to the other side, and microwave additional 5-6 minutes. Poke a fork in the potato, it should be soft. With a knife, lengthwise slice down the middle, use a fork to fluff out the potato (or you can use a slicer to get rid of the skin). In a mixing bowl, mash the potato well, add eggs and nut butter, mixing throughly until smooth. Add and combine dark chocolate cocoa powder, sugar, and baking soda. Pour in an 8x8 pan (lined with parchment), sprinkle chocolate chips and salt, bake for 24 minutes or until your preferred taste. . . . If you don't know from my stories, I've gone paleo! I've been wanting to give my body a rest from the sugar and processed foods! I'm on day 5 and feel so much better! 😍 Paleo is already gluten free and dairy free! 🌟Carrot Cake Mug Cake (GF/DF)🌟 Is it time for carrot cake?! 🥕 🐰 How about a mug cake style? ☕ 🤤 This tasty number is so good, it's great for a pick me up or for dessert! 🥰 Recipe below! 👇 Ingredients: 3 1/2 tbsp almond flour 2/3 tsp baking powder 2 tbsp peanut butter 2 tbsp sugar 1 1/2 tbsp grated carrots 1 egg yolk 1 tbsp almond milk 2/3 tsp cinnamon 1/2 tsp ground ginger 1/8 tsp nutmeg 1/2 tsp vanilla extract Almond whip cream (topping) Walnuts (topping) Directions: In your favorite mug or small baking bowl, combine peanut butter, milk, egg yolk, sugar, carrots, and vanilla extract until you see a smooth finish. Add and stir in flour, baking powder, cinnamon, ginger, nutmeg until there are no lumps. (Transfer to a mug if using baking bowl). Microwave on high for 60 to 70 seconds. If it's not done, add an additional 5 seconds until you see a cake form in your mug! Tip: Use a toothpick to check doneness! If it's wet, it still needs a few more seconds.
