SWEET POTATO PANCAKESšŸ šŸ„ž - Iā€™ve made sweet potato brownies (which are bomb dot com btw), so why not make a healthy and delicious sweet potato stack...like sošŸ‘†šŸ» ā€¢ ā€¢ ā€¢ āœØIngredientsāœØ 1/2 of a very large sweet potato (you really need to eyeball it here), 2 eggs, dash of cinnamon, dash of Himalayan pink saltšŸ’– ā€¢ ā€¢ ā€¢ 1. Boil the sweet potato till itā€™s fully softened in high-heat water 2. Let it cool 3. In a blender, blend all of your ingredients 4. Heat a skillet with coconut or olive oil and plop spoonfuls of the ā€œbatterā€ 5. Cook for 2-3 minutes on each side...donā€™t flip till it cooks almost through or else it will break apart...these are very gentle pancakes 6. CRISPY BAKED YUCA ROOT FRIES - also known as cassava root, Iā€™ve used cassava flower in baking recipes before but this was my first time baking them like fries. And. Let. Me. Tell. You. They. Did. Not. Disappoint PEOPLE. I donā€™t know why it took me so long to try this, because there are so many health benefits to yuca root and thereā€™s literally no reason to make regular potatoes (which contain essential no health bennies) when there are so many alternatives like yuca root, turnips and sweet potatoesšŸ  ā€¢ ā€¢ ā€¢ āœØIngredientsāœØ 1 large yuca root, 2-3 tablespoons coconut oilšŸ„„, salt, pepper and whatever seasoning you desire. I used @traderjoes Everything But the Bagel seasoning herešŸ‘ŒšŸ» ā€¢ ā€¢ ā€¢ 1. Peel the yuca root & cut into your slices 2. On high heat, boil water till you have bubbles and cook the yuca root for 10-15 minutes...until it is tender but not mushy 3. Preheat oven to 425F 4. Pat dry your yuca root and place onto a baking sheet, topping it with coconut oil and whatever spices your heart desiresā¤ļø 5. Bake for about 30 minutes or until you reach your desired crispy 6. HOMEMADE CHOCOLATE HUMMUS - Yesterday, shared traditional hummus. Today, we feast on chocolate hummus!šŸ¤¤ ā€¢ šŸ’«deetsšŸ’« 1 can of chickpeas, pinch of cinnamon, maple syrup 3-6 tablespoons, 4 tablespoons unsweetened baking cocoa powder, 1/3 tablespoon vanilla extract, pinch of salt, 2-3 tablespoons of wateršŸ’¦ ā€¢ 1. Rinse the can of chickpeas and strain 3 times 2. Add everything except the water to a food processor/blender and mix till you blend completely...add water last to reach desired consistency 3. Taste it to see if youā€™d like to add additional maple syrup 4. Add nuts or chocolate chips if desired 5. Enjoy with fruit, top on toast or eat on its own like a moussešŸ“šŸšŸž
