Happy Gin & Tonic aka Gillis Fonda Day! 🍸 Our distillery is located in the heart of Hudson Valley and, as history would have it, Eral’s great, great (many greats) grandfather had also participated in some mischievous distillery activities in this very valley many moons ago. “The first Fonda of record in America, and the first of that name in the Mohawk Valley of New York, was Jellis Douwse Fonda, who was born around 1604, probably in The Netherlands. He is thought to have arrived in New Amsterdam (now New York City) in 1651, while the area was still under control of the Dutch. Later that year, on October 19, the court in Rensselaerwyck (not far from present-day Albany) gave him permission to distill liquor in a house belonging to Evert Pels, next door to the brewery, on condition he pay the required dues to the patroon and co-directors. Jellis (sometimes spelled Jillis) lived in Beverwyck (Albany, NY), as early as 1654. He probably died by 1664 because Jonathan Pearson, in his history, Settlers of Schenectady, reports, "In 1664, Hester and son Douw Jillise, and daughter Greeteen Jillise, sold to Coster Van Aecken, 2 distillers kettels for 400 guilders. She was then probably a widow." He is buried in the lovely Old Caughnawaga Cemetery in Fonda, NY.”

The Poughkeepsie, New York-located brand is currently in the process of aging its first Whiskey (just over 660 days to go at the time of writing this article), but has already made waves with its Tod & Vixen’s Dry Gin 1651, which has picked up several awards, including Double Gold at the San Francisco World Spirits Competition. In this week’s Bottle Breakdown, we sat down with Bachli to discuss the history, process, and creation of Tod & Vixen’s Dry Gin 1651. I have a profound appreciation for the process of producing Tod & Vixen’s and the depth of flavor that develops from carefully selected raw materials and a process that is solely focused on maintaining the integrity of the botanicals – delivering an experience that we hope transmits our passion to the consumer. Tod & Vixen’s is a conglomeration of 8 hand selected botanicals macerated in a wheat base spirit and then distilled on the botanicals – culminating in a vibrant and harmonious expression of juniper, citrus, spice and earth tones found in our gin!
