    It’s a little bit cauliflower, a little bit broccoli, and a whole lot of geometry! We think this delicious cruciferous vegetable looks a little bit alien, to be honest! We do eat a lot of seasoned roasted cauliflower, as well as roasted broccoli, but sometimes you just want a change of pace.     Easy Vegan Mozzarella Cheese (Paleo, Gluten-Free)

    It turns out that making your own vegan mozzarella is surprisingly easy and the results are so much better than the vegan cheeses I’ve found in the store. My absolute favorite way to enjoy this mozzarella is on pizza, but I think you’ll find that it’s delicious any way you use it. The base for this vegan cheese is cashews, which I use and love all the time in creams and sauces. They offer plant-based protein and are considered an excellent source of copper and a good source of magnesium, manganese, vitamin K, phosphorous and zinc.

    Vegan Creamy Pasta Primavera (gluten-free)

    All of my favorite veggies are here in this dish, and when tossed with penne pasta and a creamy lemon sauce it’s the perfect dish to satisfy a pasta craving. A creamy lemon sauce (similar to my Pasta al Limone) infuses this dish with creamy, comforting brightness that’s just *chef’s kiss* perfect. The starch that’s cooked out of the pasta (it’s what makes the water look white/cloudy!) helps the lemon sauce blend to a perfect, creamy finish. Blended with a cup of reserved pasta water, garlic, a splash of pure maple syrup, and salt and pepper, it creates a creamy, flavorful sauce that turns this into a restaurant-quality dish.

I add in raisins (or currants) and dried cherries or dates for my own spin this special traditional dish. Since it’s such a sweet dish, you can eat charoset plain with a spoon if you want…my kids love it that way! Use it as a filling in hand pies or even Homemade Vegan Pop Tarts, add a crumble topping to turn it into Charoset Crispy, stir it into Overnight Oats, or just eat it as a snack!

    This blackberry chia seed jam recipe is so easy, and it’s free of pectin and refined sugars. It’s super easy to make, and because the chia seeds are a natural thickener, you don’t need pectin or a lot of ingredients. You can use them to grow a crazy plant/pet, you can put them in your smoothie, you can make egg replacers with them, you can make chia seed pudding, and you can make amazing fruit jam with them. Blackberries are pretty firm, and don’t release a ton of liquid when you cook them, so if you use a different berry, you may need to increase the amount of chia seeds.

Namaste flour works very well for cookies, and it’s easy to find at many stores or online at Amazon or Vitacost. You can also try Enjoy Life Gluten Free Flour or Now Foods All Purpose Gluten Free Flour, both of those blends work really well for baking cookies. if you aren’t gluten free, go ahead and use all purpose flour or whole wheat flour in an equal amount.

    Homemade Dairy Free Chocolate Easter Bunny (3 Ways)

    6 inch chocolate bunny mold (for our large bunnies): you can make 2 bunnies per mold so if you’d like to make more than 2 at once, you can buy 2-3 molds For our chocolate bunnies, we used the Nestle Simply Delicious semi-sweet chocolate chips and the Great Value brand allergy friendly white chocolate chips. If you’d like to make sugar free chocolate bunnies, check out the Bake Believe sugar free semi sweet chocolate chips that don’t have dairy in them (our local Walmart carries them). If you make white chocolate bunnies, I’d use the Great Value allergy friendly white chocolate chips rather than the Nestle Simply Delicious white chocolate since the Great Value white chocolate is much more crisp/firm and comes out of the mold well (
