    Tender corn is simmered with dairy-free butter, onion, garlic, and epazote, then topped with your choice of mayonnaise, crema, lime juice, chile powder, and vegan queso fresco. However, the modern variation of vegan Mexican street corn is not pre-Hispanic since it was the Spanish themselves that brought limes, cow’s milk cheese, and crema. Chile powder: Use a chile powder that doesn’t have lime in it. Serve in a cup and let everyone choose their own topping or if you want to leave the corn on the cob throw it on the grill then brush it with butter, mayo, vegan cheese, and chile powder.

    Cantaritos Locos

    Fresh orange, grapefruit and lime juice are mixed with tequila and grapefruit soda, poured over crushed ice, then topped with orange, grapefruit segments, and pineapple. It is typical in town celebrations and fairs like the “ El dia de los Cantaritos” June 24th and 29th, and Feria Nacional del Tequila on December 13th. The best tequila for this is white tequila for its mild taste that lets the fruit juice shine through. For an extra kick I’m using chamoy to line the cups then dipping them in the * chile powder, but you can use lime juice to do this as well.

    Guava Salad, Queso Fresco and Candied Pecans

    If you have been following me for a while you know that healthy can be delicious and satisfying, like this guava salad with queso fresco topped with candied pecans. The variety I like is called Mexican cream and is yellow on the outside and has a white/yellow flesh with seeds in it. Primal Kitchen makes a variety of vegan products like the Primal Kitchen Organic Ketchup, which is how I found them in the first place. In the last couple of months, I’ve made buffalo chickpea jalapeño poppers, vegan lasagna, poblano cream pasta, and jalapeño and vegan cheese tamales with my favorite primal products.

    It’s Been 30 Years

    My Grandma died on December 31, 1990 when I was only 8 years old, so while I do have some concrete memories, most of my memories of her are hazy- almost dreamlike – of a quiet and sweet woman who loved all of her grandchildren. I may not have had the words in my young vocabulary when I running around causing chaos with my other young cousins, but with age comes wisdom and and looking back, I can see the ways sickness affected her body Was it both her and my Grandpa who left a legacy of music that included voices like Luis Miguel, Perry Como, Keely Smith, Eydie Gormé y Trio Los Panchos? But even while the explorations are on hold, being home has included many chats, memories, and stories from both my Mom and Dad about all of my Grandparents.
