    Chicken Cordon Bleu Casserole

Layers of chicken, ham, and a savory cheese sauce are topped with buttery Panko breadcrumbs, then baked in the oven until warm and bubbly. Add shredded chicken to a casserole dish, then top it with ham, a simple cheese sauce and some Panko breadcrumbs. The Panko breadcrumbs create the perfect buttery, crunchy topping to this chicken cordon bleu casserole. Feel free to use regular breadcrumbs instead of the Panko breadcrumbs, you can also leave the breadcrumbs out altogether.

Pan Seared Cast Iron Pork Chops w/ Easy Pan Sauce

If you’re looking for PERFECTLY COOKED pork chops, then this cast iron skillet recipe is for you. Heat ghee or vegetable oil in a cast iron skillet over medium-high heat (I love the flavor of ghee, but you can use oil if you don’t have it). It will take about 10-12 minutes (give or take) to cook 1 inch pork chops in a cast iron skillet on the stove. If you don’t have one, you can use a stainless steel skillet (it’s best to use a heavy pan that will maintain even heat–avoid aluminum pans or lightweight non-stick pans).

EASY Gluten Free Carrot Cake Muffins (Paleo Option)

The muffins are made with a base of almond flour and coconut flour, making them gluten free and grain free. I use Bob’s Red Mill almond flour and coconut flour, since they’re easy to find, affordable and reliably fresh. These healthy, naturally sweetened carrot cake muffins are gluten-free, grain-free, and are packed with carrots, but who cares, because THEY TASTE JUST LIKE CARROT CAKE! I use Bob’s Red Mill almond flour and coconut flour, since they’re easy to find, affordable and reliably fresh.

Air Fryer Potato Wedges with Seasoning

Air fryer potato wedges are the perfect side – seasoned to perfection and made crispy, but still tender, in the air fryer. Y’all know I love my air fryer because it gives you that delicious deep-fried feeling without the work and the calories of actually deep-frying food. Always, always remember to place your air fryer potato wedges in the air fryer basket in one even layer with space between each wedge. Overcrowding or overlapping means the wedges won’t cook evenly because the air can’t circulate like it needs to.

  • What I Eat in a Day

Since I have shared that I am continuing on my 100 pound weight loss journey, many of you wanted to know what I eat. What I Eat in a Day for Weight Loss: Coffee – 6:30 am Nutpods is the only creamer I use, it is delicious and fits into almost any lifestyle (dairy free, Whole30, Paleo, keto) Meal I made my Sweet Pepper Nachos with Cilantro Lime Greek Yogurt Sauce.

    Favorite Finds: March 2021

known since my Celiac Disease diagnosis that activated charcoal is one of the best things to take if you’re accidentely “glutened” but hadn’t purchased a bottle until earlier this month when I got super sick from take out – ugh. This planner is not only dateless and evergreen, so if you skip a few days you’re not wasting paper, but each page helps you create a complete road map for your day – work, home, and wellness in one. I don’t think I’ve used Herbal Essences since high school but the grapefruit + mint combo in this Herbal Essences White Grapefruit and Mosa Mint Shampoo + Conditioner caught my eye at the grocery store a few weeks ago. I like the Beauty Collagen, vs Vital Protein’s original collagen peptides, because my face as been SO dry all winter and the hyaluronic acid in the mix is supposed to help your skin retain moisture.

  • Peach Cobbler in a Jar (Gluten Free + Vegan)

A layer of sweet juicy peaches is topped with a homemade Paleo cobbler topping then baked to gooey bubbly golden perfection. In these Cobbler in jars, peaches are used in the sweet fruity filling. Fill 3 or 4 oven safe jars with peaches. If using frozen peaches, thaw peaches and squeeze out all excess moisture.

19 Best Things to Do in #Wisconsin

There's plenty to do in Door County, not the least the Whitefish Dunes State Park with a nice little beach and great (if cold by now) swimming. Nothing in history beats sledding,,building a snowman, playing a fast moving, slipping and sliding game of pie tag (chasing each other while having to remain on the stomped down lines of a giant sliced pie configuration in the snow with the center being a safety zone) or trying to track each other’s footprints in the a game called “Fox. The best are high in healthy fats (such as olive oil and wild-caught salmon), proteins, and carbs from non-processed foods - oatmeal, fresh fruits and veggies like butternut squash, peppers, tomatoes, sweet potatoes, bananas, and citrus fruits that are usually available in the winter and ideal. Has the standard IMAX shows (which if it's the right film works wonders) and good exhibits on the tropical forest, the geologic/environmental/biodiversity evolution of Wisconsin through the ice age, old and diverse Milwaukee (great old-fashioned candy store in there), AND BUTTERFLIES.

    Strawberry & Orange Smoothie (Vegan - Whole30)

None All you need is a handful of ingredients to make this delicious smoothie, no running out to the store to find special ingredients, you likely already have everything you need in your kitchen. What you need to make this Strawberry Orange Smoothie Frozen Banana: Frozen banana is my go to ingredient for almost all smoothies. Rather than using orange juice in this smoothie, adding an entire peeled orange adds flavour and helps to thicken it, plus the orange pulp is high in fiber. None Coconut Milk or Coconut Cream: although this smoothie recipe is already very thick and creamy, if you want to make it extra indulgent add in coconut milk.
