    Raspberry Chambord Brownies

We have had lots of successes in the Skinny Chick test kitchen, but these Raspberry Chambord Brownies with white chocolate icing were a home run. The results were rich and fudgy, with a subtle boost of flavor and moistness from the raspberry jam and Chambord, a black raspberry liqueur. A double dose of chocolate never hurts, plus it’s the perfect backdrop for plump ripe raspberries if you care to garnish these raspberry jam brownies for company.

  • Gluten Free Chocolate Chip Banana Muffins

    Preheat the oven to 350′ and line a muffin tin with muffin linersIn a bowl, add the flour, baking soda, cinnamon, and salt. Whisk well to combine and then add in the coconut oil and vanilla extract. Fold the dry flour mixture into the wet ingredients using a rubber spatula until combined and then fold in the chocolate chips. Scoop the mixture into the muffin tray (about halfway full), top with a few more chocolate chips and bake for 16-18 minutes or until a toothpick comes out clean
